African Eggs

Breakfast has to be by far one of my favourite meal times. A recent discovery we've made is something called "North African Eggs" apparently it's what they eat for breakfast. A delicious blend of fresh peppers, tomatoes and poached eggs. It brings and all new dimension to breakfast food - don't be fooled though this is great for a kick start to the day or to help re-juvenate you after a long tiring day at work. Cooking time only 30mins. 
Ingredients:
3 peppers 
6-7 tomatoes
2 onions
250ml (ish) stock
4 eggs 
+/- barley pearls/ rice
Mix everything together in a large pan and allow to stew for a while then make 4 small wells and crack the eggs into them, cover and leave to simmer for 10 mins. 
Perfect with a glass of red!
