Sweet 'tato Gnocchi

One late Friday evening indecisive about what to have for dinner we came across a recipe for homemade Gnocchi. With a bit of modification and improvisation this recipe for homemade wholemeal Sweet potato Gnocchi was invented!
Gather together:
3-4 x Sweet Potatoes
Cling Film
Wholemeal/ Plain Flour
  • Wrap the potatoes in clingfilm and place in the microwave for approx 7mins until soft (can also bake them)
  • Remove the skins and mix the potatoes with the flour until forms a dough type consistency (not to solid but not too sticky!)
  • Roll into long sausages on a floured board (Notice my chopping board.... cut off from the work top! Bargain)
  • Cut up into approx 1 cm sized pieces
  • I then boiled them until they floated to the top then removed them using a "holey" spatula.
  • You can add what ever topping you want - we simply had it with Lemon juice and rocket.
I'm definitely going to try this recipe again- in total it probably took us 25 mins to make and tasted delicious! You can obviously vary from this recipe ... I might try it next time with herbs i.e. mint or oregano, or maybe even a chili version if I feel brave!
