Completely Vegetarian, completely filling, completely wholesome and completely Delicious!
This has to be my favourite dinner during winter and is so easy to make...
Ingredients:
Drizzle of oil, one red onion, 1 Bag chantenay carrots, 2 parsnips, 1/2 Suede, glass of red wine, litre of vegetable stock, cup of barley pearls/ quinoa, vegetable stock, sprig of thyme and parsley, 2 Bay leaves.
Dumplings:
100g self raising flour, 50g butter, 50g grated cheese and a sprinkling of herbs!
Mix together and mould then place on top of the stew mix.
Heat in oven for 20-25mins
